Chargrilled butternut squash with cumin and chilli recipe

During grilling, the sugars in the squash caramelise, giving it a lovely flavour. The mouthwatering combination of sweet and salty will make you think about squash in a whole new way.

Preparation time: 5 minutes
Cooking time: 8-10 minutes
Serves: 4 portions


½ butternut squash (peeled, seeded and sliced 1 cm thick)
1 tbsp cumin seeds (dry roasted until fragrant and ground)
1 pinch dried chilli flakes
1 pinch salt flakes
1 tbsp extra virgin olive oil


  1. Combine together the ground roasted cumin, chilli flakes, salt and olive oil.
  2. Brush evenly over all sides of the sliced squash and place onto the charcoal grill. Grill while gently turning every few minutes until just tender. A toothpick should go through with no resistance when fully cooked.
  3. Set aside and keep warm until required.
