During grilling, the sugars in the squash caramelise, giving it a lovely flavour. The mouthwatering combination of sweet and salty will make you think about squash in a whole new way.

Cooking time: 8-10 minutes
Serves: 4 portions
½ butternut squash (peeled, seeded and sliced 1 cm thick)
1 tbsp cumin seeds (dry roasted until fragrant and ground)
1 pinch dried chilli flakes
1 pinch salt flakes
1 tbsp extra virgin olive oil
- Combine together the ground roasted cumin, chilli flakes, salt and olive oil.
- Brush evenly over all sides of the sliced squash and place onto the charcoal grill. Grill while gently turning every few minutes until just tender. A toothpick should go through with no resistance when fully cooked.
- Set aside and keep warm until required.
